Pumpkin Pie Recipe You Would Never Know Was Healthy

Fall is here, and we can’t wait to start engaging in all the fun, festive activities. Between Halloween and Thanksgiving, this might just be the best time of year. And how can we talk about fall without mentioning pumpkin spice. This is a time where you can consume all the pumpkin related products you desire, and no one can say anything about it.

While pumpkin spice may be everything nice—it’s not exactly nice for your body.

Many fall sweets are packed with sugar that is not a part of the healthy lifestyle that so many of us are trying to maintain. How are we supposed to feel good and energized when we are surrounded by pumpkin treats every day?

The solution: healthy pumpkin pie.

Yes, you read that correctly. Healthy pumpkin pie exists, and we are going to give you the perfect recipe to squash all your cravings! This recipe by iFoodReal is a major hit among the foodie community and we know you will love it too!

Ingredients:

Pumpkin Pie Filling:

Instructions:

  1. Preheat oven to 425 degrees F. Spray 9″ pie dish with cooking spray and set aside. In a large mixing bowl, combine Crust ingredients and mix with spatula, continuing with your hands until a ball of dough forms. If necessary, add more almond milk or flour, use your judgement.
  2. On a flat surface, roll out the crust until it’s large enough to cover the pie dish. First, flatten the dough ball with your hands and then use the rolling pin. Dust the dough with flour while rolling, and it might help to place it on a parchment paper half way through for easier rolling and moving.
  3. Transfer crust into the pie dish and mold to fit using your hands. Cut excess dough with kitchen scissors or knife and make nice edges with a fork. *** Bake for 15 minutes.
  4. While crust is baking, in a medium bowl, add eggs and whisk for 30 seconds. Add remaining Pumpkin Pie Filling ingredients and whisk really well. Pour into pre-baked crust, reduce oven temperature to 350 degrees F and bake for 55 minutes.
  5. Let pumpkin pie cool completely (!!!) before slicing. Using serrated knife, cut into 8 slices and serve your favorite way.
