INGREDIENTS:

  • 1 pound ground beef
  • 2 tablespoons poultry seasoning
  • 1 stick (8 tablespoons) unsalted butter
  • 8 to 12 ounces cream cheese
  • 1 tablespoon garlic salt
  • 2 cups whole milk
  • 1/2 cup grated Asiago cheese
  • 1/2 cup grated Parmesan cheese
  • 12 no-boil lasagna noodles
  • 2 cups spinach leaves
  • 1 cup sliced white mushrooms
  • 2 cups grated low-moisture mozzarella cheese

Preheat oven to 350 degrees F.

GROUND BEEF:

Heat a large nonstick skillet over medium heat. Add the ground beef and poultry seasoning (this makes it taste like sausage). Break up the meat with a wooden spoon. Cook until browned and cooked through, 10 to 15 minutes.

SAUCE:

For the alfredo sauce, melt the butter in a large saucepan over medium heat. Add 8 ounces cream cheese and the garlic salt and whisk until smooth. Gradually whisk in the milk. Cook and stir until very smooth. Stir in the Asiago and Parmesan until smooth. The sauce should be the consistency of gravy at this point. If it is still too thin, whisk in up to 4 ounces additional cream cheese or shredded mozzarella.

ASSEMBLY:

To build the lasagna, spread one-quarter of the sauce in the bottom of a 9 x 13-inch baking pan. Layer 4 of the noodles, half of the beef, and half of the spinach and mushrooms and spread with another one-quarter of the sauce. Add another similar layer of noodles, beef, spinach/mushrooms, and sauce. Add a final layer of noodles and spread with the remaining sauce. Sprinkle the mozzarella over top.

Bake until the sauce is bubbly and the lasagna is lightly browned, about 30 minutes. Let cool 5 or 10 minutes before cutting into squares to serve.
