Stir-Fried Pea Shoots with Garlic

  • 1 tablespoon/15 ml olive oil
  • 12 ounces/350 g pea shoots, tough stems trimmed and wilted leaves removed, washed thoroughly and patted dry
  • 2 garlic cloves, finely chopped
  • 3 tablespoons/45 ml Shaoxing rice wine (yellow rice wine)
  • 1/4 teaspoon/1.5 g salt


  1. Place a wok over a high heat, then add the oil and heat until it is very hot. Add the pea shoots and garlic and toss lightly for 20 seconds. Add the rice wine and salt, and stir fry for 2 minutes or until the shoots are lightly wilted.
  2. Strain the excess moisture from pea shoots, if necessary, and immediately transfer to a platter and serve.
