Spicy Tuna and Avocado Hand Rolls

INGREDIENTS

  • 7 ounces/200 g sashimi-grade ahi tuna, finely chopped
  • 1/3 cup/45 g spicy mayonnaise for sushi
  • 2 tablespoons/10 g finely-chopped green onions
  • 1 teaspoon/5 ml fresh lemon juice
  • 1 teaspoon/5 ml soy sauce
  • 1/4 teaspoon/about 1 ml toasted sesame oil
  • Four 7x4-inch/18x10-cm dried nori sheets
  • 1 1/2 cups/130 g Sushi Rice (see recipe)
  • Pinch of wasabi paste
  • 1/4 ripe medium avocado, peeled, pitted, cut lengthwise into 4 thin slices
  • 1/4 Japanese cucumber, peeled, seeded, cut lengthwise into thin, long strips

PREPARATION:

  1. Stir the tuna, spicy mayonnaise, green onions, lemon juice, soy sauce and sesame oil in a small bowl to blend. Place one nori sheet in a dry hand.
  2. Wet the other hand and pick up a small handful of sushi rice (about a generous 1/3 cup/30 g) and spread the rice evenly over the left whalf of the nori. Using moistened hands will help prevent the rice from sticking to your fingers.
  3. With a finger, spread a thin line of wasabi evenly down the center of the rice. Mound a fourth of the tuna mixture down the center of the rice. Top with 1 avocado slice and a fourth of the cucumbers.
  4. Beginning with the covered side, roll the nori around the filling at a slight angle to achieve a conical shape. Repeat with the remaining nori, rice, tuna mixture, avocado and cucumbers to make 4 rolls total.
