INGREDIENTS:

  • 1/2 cup/120 ml fresh lime juice
  • 3 tablespoons (packed)/60 g grated palm sugar
  • 1 tablespoon/15 ml Thai fish sauce (nam pla)
  • 2 tablespoons/10 g finely chopped shallot
  • 1 teaspoon/about 2.5 g very finely chopped seeded fresh green jalapeno chili
  • 1 teaspoon/about 2.5 g very finely chopped seeded fresh red jalapeno chili
  • Assorted steamed dim sum

PREPARATION:

  1. Combine the lime juice, palm sugar and fish sauce in a medium bowl and stir until the sugar dissolves.
  2. Stir in the shallot and the green and red chilies. Serve with steamed dim sum.
