  • 2 eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 teaspoon orange rind, grated
  • 1/2 cup flour
  • 2 teaspoons baking powder
  • oil for frying
  • 3 cups powdered sugar


Place oil into a large pot, about 2" high, turn on medium heat.

Beat eggs slightly in a large bowl.

Add sugar, vanilla, salt, ricotta, orange zest, flour and baking powder to the eggs and beat gently until combined. Dough will be sticky.

Drop dough into the hot oil by the spoonful using small scooper.

Fry a few dough balls at a time. They should flip on their own. If they don't, use a slotted spoon to flip them.

Once cooked, remove and drain on a plate lined with paper towels.

Roll in powdered sugar and serve hot.
