Nina's Mussels Ingredients:

  • 1 pound mussels (about 3 dozen)
  • Breadcrumbs, Buddy's or premade (1 cup)
  • Garlic (2 large cloves)
  • Fresh parsley (1 tablespoon, chopped)
  • Olive oil

If you're making Buddy's breadcrumbs, you'll also need:

  • 1-pound loaf rustic Italian bread
  • Pecorino cheese (1 cup, finely grated)
  • Garlic (2 cloves)
  • Dried Italian herbs (2 tablespoons)
  • Dried parsley (3 tablespoons)

Italian Wheat Pie Ingredients:

  • 1 pound ricotta cheese
  • Granulated sugar
  • All-purpose flour
  • Orange blossom water (3 tablespoons)
  • Lemon zest (1 teaspoon)
  • Orange zest (1/2 teaspoon)
  • 3 extra-large eggs
  • 1 pound cooked wheat berries (about 3 cups)
  • 2 sticks of butter
  • Vanilla extract
  • Honey
  • Baking soda
  • Baking powder

Manhattan Clam Chowder Ingredients:

  • 2 dozen cherrystone clams
  • Clam juice (2 cups)
  • Unsalted chicken stock (2 cups)
  • Neutral cooking oil
  • 2 thick slices smoky bacon
  • 1 medium leek
  • 2 stalks celery
  • Salt
  • Garlic (4 cloves)
  • 2 medium Yukon Gold potatoes
  • Black pepper
  • 1 14-ounce can petite diced tomatoes in juice
  • Bay leaf
  • Fresh thyme (3 sprigs)
  • Fresh Italian parsley (2 tablespoons, chopped)

Pasta Pesto Ingredients:

  • 3 cups small, tender basil leaves
  • Pine nuts (2 tablespoons)
  • Pecorino cheese (1/2 cup, finely grated)
  • Kosher salt
  • Garlic (3 small cloves)
  • Best quality olive oil

Stuffed Mushrooms Ingredients:

  • 2 dozen white button mushrooms
  • Olive oil
  • 1 shallot
  • Garlic (2 cloves)
  • White wine (1/4 cup)
  • Kosher salt and black pepper
  • Breadcrumbs (1/2 cup)
  • Parmigano reggiano cheese (1/2 cup plus 2 tablespoons, grated)
  • Fresh Italian parsley (2 tablespoons, chopped)
