  • Dry Italian white wine (1/2 cup)
  • Rich chicken stock (1/2 cup)
  • Salt

Baked Sausages with Savory Onions Ingredients:

  • 6 fat links sweet Italian sausage with fennel
  • 1 bulb fennel
  • 2 medium Spanish onions
  • 2 cloves garlic
  • Olive oil
  • Fresh thyme
  • Rich unsalted chicken stock
  • Italian white wine (3/4 cup)
  • Salt and pepper
  • Brown sugar
  • Dijon mustard

Eggplant Parmesan Ingredients:

  • 2 medium-large eggplants
  • 2 cups breadcrumbs
  • Parmesan cheese
  • All-purpose flour
  • 6 large eggs
  • 12 ounces sliced mozzarella
  • Marinara (3 cups)
  • Olive oil for frying

Fennel, Herb and Garlic Roasted Pork Ingredients:

  • 2 1/2 to 3-pound boneless center-cut pork roast with layer of fat on top
  • Fennel seeds
  • Coriander seeds
  • Salt and pepper
  • 4 garlic cloves
  • 8 to 10 sage leaves
  • Fresh rosemary
  • Olive oil
  • White wine
  • Rich chicken stock
  • Butter

Stuffed Jumbo Shrimp Ingredients:

  • 2 pounds jumbo shrimp
  • Salt and pepper
  • Olive oil
  • Butter
  • 1 large shallot
  • 2 cloves garlic
  • Splash of white vermouth
  • Breadcrumbs
  • Cayenne pepper
  • Fresh oregano
  • 1 lemon
