Get everything you need to cook with the Kitchen Boss this week!

Nina's Famous Meatless Meatballs:

  • Seasoned breadcrumbs (1 cup)
  • 5 eggs
  • Whole milk (3/4 cup)
  • Pecorino romano cheese (3/4 to 1 cup, grated)
  • Garlic (1 clove)
  • Fresh Italian parsley
  • Kosher salt and black pepper
  • Vegetable oil
  • 1 medium onion
  • 1 25-ounce can whole peeled tomatoes
  • Sugar
  • Fresh basil

Fish Soup Sicilian Style Ingredients:

  • Extra-virgin olive oil
  • 1 Spanish onion
  • Fennel (1/2 cup, diced)
  • Garlic (2 plump cloves)
  • Italian white wine (1/2 cup)
  • 1 14.5-ounce can plum tomatoes
  • 2 boxes seafood stock
  • 2 pounds filet of white-fleshed fish
  • Fresh Italian parsley
  • Ciabatta bread, to dip

Sausage Breakfast Strata Ingredients:

  • 3 links Italian sausage
  • Olive oil
  • 1 medium onion
  • 1 pint cremini mushrooms
  • Red chili flakes
  • Stale bread (2 cups, diced)
  • 8 eggs
  • Milk
  • Fontina cheese (1 cup, grated)

Kid's Cavatelli with Broccoli and Cream Ingredients:

  • Broccoli florets (4-5 cups)
  • Garlic (3 plump cloves)
  • Olive oil
  • 1 pound fresh or frozen cavatelli (not the ricotta kind)
  • Parmesan cheese for garnish

Pasta Fagiole Ingredients:

  • Dry borlotti beans (2 cups)
  • 2 small Spanish onions
  • 1 celery stalk
  • 1 large carrot
  • Garlic (3 cloves)
  • Olive oil
  • Red pepper flakes
  • 1 sprig rosemary
  • Rind from parmesan cheese
  • Kale leaves (2 cups; can also use spinach or Swiss chard)
  • Small macaroni (2 cups)
  • Pecorino cheese for garnish
