Get everything you need to cook with the Kitchen Boss this week!

Steak a la Buddy Ingredients:

  • 4 1/2-inch thick New York strip steaks, approximately 10-12 ounces
  • Large Spanish onion
  • Olive oil
  • Butter
  • Soy sauce
  • Worcestershire sauce
  • Dried thyme
  • Red wine (1/4 cup)
  • Rich chicken or beef stock (1/4 cup)

Veal Milanese Ingredients:

  • 4 bone-in veal chops, approximately 12 ounces each
  • All-purpose flour
  • 4 eggs
  • Breadcrumbs, premade or Buddy's recipe (3 cups)
  • Parmesan cheese (1/2 cup, grated)
  • Olive oil
  • Butter

Smoked Salmon Risotto Ingredients:

  • Chicken stock or mild fish stock (5 cups)
  • Butter
  • Olive oil
  • Shallots (1/3 cup, minced)
  • Arborio rice (1-1/2 cups)
  • Dry white wine (1/2 cup)
  • 1/2 pound smoked salmon (Scotch or Irish)
  • Half and half (1/2 cup)
  • Parmesan cheese (1/2 cup, grated)
  • 2 egg yolks
  • Lemons for serving

Pork Loin with Apple Sauce Ingredients:

  • 3-pound center-cut pork loin roast with cap fat
  • Olive oil
  • Large Spanish onion
  • Butter
  • 3 Granny Smith apples
  • Brandy (2/3 cup)
  • Veal or chicken stock (2 cups)
  • Heavy cream (1/4 cup)

Seafood Fra Diavolo Ingredients:

  • Olive oil
  • 2 shallots
  • Garlic (3 cloves)
  • 2 small fresh green chilies (serrano suggested)
  • Red pepper flakes
  • White vermouth (3/4 cup)
  • 12 littleneck clams
  • 12 mussels
  • 28-ounce can crushed tomatoes
  • 8 large shrimp
  • 1/4 pound calamari
  • Fresh basil (2 tablespoons, torn)
  • Parsley (1 tablespoon, chopped)
  • 1 pound linguine
