Broccoli Rabe Sausage


  • 1/2 pound Sweet Italian Sausage (loose meat out of the casing so it's like ground pork)
  • 1/2 pound Parsley & Cheese Sausage
  • Broccoli Rabe
  • 10 cloves of garlic chopped
  • 2 Tablespoon Olive Oil
  • Salt and Pepper
  • 1 cup Chicken Stock
  • 1/4 cup Grated Romano
  • 1/4 cup Grated Parmesan
  • 1 Teaspoon Red Pepper Flakes


  • Place pan on low heat. Add olive oil and garlic and cook until fragrant.
  • Remove casings on Sweet Italian sausage and Parsley and Cheese sausage. Add sausage to pan and cook until browned. This should take about 10 - 12 minutes then lower heat to medium.
  • While the sausage is cooking, put a large pot of salted water on to boil.
  • Chop the broccoli rabe into 2-inch pieces and add to boiling water. Cook for 5 minutes and then take it out and drain it and put into sausage mixture.
  • Place 1 lb of orchiette into the same boiling water that the broccoli rabe was cooked in. Cook until al dente.
  • Meanwhile, put 1 cup of chicken broth, salt and pepper into sausage mixture and let liquid reduce by half.
  • Once reduced, turn the heat off and add 1 teaspoon of red pepper flakes, 1/4 cup of Romano cheese, 1/4 cup of parmesan and the cooked pasta. Toss together and serve.
