Lil Cake Boss Biscotti


-1/2 cup vegetable oil

-1 cup granulated sugar

-3 1/4 cup all-purpose flour

-3 eggs

-1 tablespoon baking powder

-1 tablespoon desired flavoring

-1 cup chocolate chips

Preheat oven to 375.

In separate bowls, combine dry ingredients and combine wet ingredients.

Add wet to dry and mix until incorporated.

Split dough in half and roll each half into a log (roughly 13") and place on lightly greased parchment-lined sheet tray.

Press down to 3/4 " thickness.

Bake at 375 degrees for 25 minutes. Remove from oven, let cool completely.

Slice the cookies about an inch apart and lay cut side down.

Bake again for 10 more minutes on each side. In Italian, biscotti means twice baked, that's why you cook the dough again, it gives the cookie that firm biscotti crunch.
