How to Make Ravioli

-3 cups AP flour

-3/4 teaspoon salt

-2 eggs

-1/4 olive oil

-1/2 cup water

Combine all - knead for 10 minutes. Roll it out to 1/8"-1/4" thickness on lightly floured surface. Cut out ravioli with large circle cutter. Fill with a tablespoon of cheese filling - brush ends with a tiny bit of water and fold shell over. Crimp with a fork. Lightly dust with flour. Freeze.

cheese filling:

-15 oz ricotta cheese

-4 oz parmesan cheese

-pinch salt & pepper

Combine all - refrigerate for 30 minutes.

Add frozen ravioli to large pot of boiling water and cook for 6 minutes or until done.
