Marie Antoinette Cake
How was the cake made? The cake was made of vanilla sponge cake, chocolate mousse, chocolate ganache filling, fresh strawberries, ivory fondant, buttercream, royal icing (delicate piping decorations), edible gold paint, french pastries (these accompanied the cake)
What's memorable about the cake? Buddy liked the idea of an "Off with their heads!" theme so had his sculptors create a bust of Marie Antoinette's head out of cereal treats and modeling chocolate so the client Adam could cut it off at the party. The guests loved it!

Baby Shower Cake
How was the cake made? The cake was made of chocolate sponge, chocolate pudding filling, buttercream, zebra-print fondant, modeling chocolate (animals).
What's memorable about the cake? Buddy wanted this cake to match the baby shower invitations which included the colors and theme of the party. The invitation had zebra-stripes so Remy made a unique zebra-print fondant to cover the cake in. The finished cake matched so well with the invitations and party theme...the owners loved it!

How was the cake made? The cake was made of vanilla sponge, chocolate fudge, cereal treats (hearse), buttercream, fondant, modeling chocolate (sculpted Dana).
What's memorable about the cake? Buddy has never made a Hearse Cake before or had a client come and pick up their cake in a hearse. While Mary thought the cake was morbid and in bad taste, Buddy and the team worked hard to make it as girlie as possible...and it was a success. Dana loved it!

Medieval Times Cake
How was the cake made? The cake was made of carrot cake, cereal treats (castle), buttercream, fondant, modeling chocolate (characters), brown sugar (dirt on track), edible paper (crests), airbrush food coloring, moveable metal track (for jousters to slide down).
What's memorable about the cake? Buddy wanted to make a carrot cake since he thought that's the kind of cake they might have made in Medieval Times. He also wanted the jousting event to be the main focal point of the cake since that's what the Green Knight explained is the main part of the show. He was able to install a metal track that allowed the jousters and their horses to "ride" towards one another and joust on the cake.

Empire State Building Wedding Cake
How was the cake made? All 14 couples got to choose what flavor of cake and filling they wanted. Some of these included: red velvet cake with cream cheese icing, vanilla cake with banana filling, angel food cake with peanut butter filling, chocolate cake with chocolate fudge filling, chocolate cake with raspberry filling.
What's memorable about the cake? Buddy knows how hard it is to please one bride let alone 14 but Sal came up with the great idea of doing an old-school Bridge Cake like Buddy Sr. used to make. This cake would allow every couple to have the flavor and filling they want on their own individual cake as well as the WOW factor of a grand wedding cake in one beautiful package.

What's memorable about the cake? This cake had real running water going through it! The team built a reservoir lake in the middle of the cake and a pump that pumped water through a waterfall so it looked like the characters were swimming in the icy water. The water was kept off the cake with plastic wrap and rubber.

What's memorable about the cake? Buddy wanted to surprise Lisa for her 30th birthday by making a one-of-a-kind cake he'd never made for anyone before and would probably never make again...a Lisa Cake! The cake was a likeness of Lisa based off of photos, measurements and her personal style. This cake was truly personalized for her special day.

Governor Cake
How was the cake made? The cake was made of blueberry pound cake, blueberry buttercream, cereal treats (lighthouse, some buildings), fondant and modeling chocolate (trees, fruit, figures, etc.), brown sugar (sand).
What's memorable about the cake? The cake was New Jersey themed so Buddy wanted to incorporate blueberries into the batter, since they are a very popular crop in the state. The cake batter and buttercream had fresh frozen blueberries added. Fresh frozen means they were frozen right after being picked and will retain their shape once baked into the cake, therefore not turning the cake itself blue.

Buddy's Sketchbook - Season 3 : Cake Boss : TLC
How was the cake made? The cake was made of vanilla sponge cake, fudge filling, buttercream, black, white and gray fondant, disco petal dust, modeling chocolate (people, taxis, etc.), strobe lights, digital picture screens.
What's memorable about the cake? The client requested that the cake light up in some way but Buddy and the team were having a hard time designing the cake to make that happen. They finally got the idea to cover the front tiles of the cake in disco pedal dust and the strobe lights would bounce off of that. It worked perfectly!
