Drew's Cannoli Cupcake
Toss all of your ingredients needed for the filling in a medium sized bowl. Stir it with a spoon or rubber spatula until it’s nice and smooth. Taste a little to get a sneak peak of how AWESOME these are going to be. It’s very important to always taste everything you make. Transfer filling to a piping bag fitted with a star tip and refrigerate it until you’re ready to fill. If you don’t have any piping bags no problem! Just snip off the corner of a plastic sandwich bag – wrapping a little tape around where you made the cut will help stabilize the bag if you don’t have any piping tips.
Once your cupcakes are completely cool, poke a hole in the center of each with the back of a wooden spoon or with a clean finger. Don’t get caught licking your hands!
Get the pastry bag filled with cannoli cream and gently fill the cupcakes. You’ll feel the cupcakes filling up – don’t squeeze too hard or they may crack.
Once all of the cupcakes are filled frost however your heart desires! I love topping these with more mini chocolate chips – can you ever have enough? I don’t think so.
Sprinkling some cannoli shells on top gives a nice crunch to the cupcake. It’s always good to have different textures! Plus, it just looks plain cool.
So there you have it…a Cannoli Cupcake. Two amazing desserts combined into one delicious creation! Enjoy!
