Creamy Coconut Milk Steel Cut Oats with Blueberries. We're trying to eat more dairy/soy/gluten free in our home due to a few allergies in our kiddos. This breakfast meets those needs as well as being tasty and super easy to make. I love that I can let it cook while I'm taking a shower and getting ready for the day! . Creamy Coconut Milk Steel Cut Oats with Blueberries . o2 T coconut oil o2 cups steel cut oats o4 T honey o1 T vanilla extract o1/4 tsp salt (I use Himalayan pink) o3 cups coconut milk (not canned kind) o3 cups water oblueberries for topping . Heat pot on saut? mode. Once hot, add oil to the pot. Add oats and saut? for 2-3 minutes. This adds a richer, nuttier flavor. Add remaining ingredients except blueberries. . Cook on manual high pressure for 10 min with a 10 min NPR. Quick release any remaining pressure. It will look watery when you first take off lid. Give it a stir and you'll have perfect consistency. It thickens as it sits as well. . Serve with blueberries on top and additional coconut milk, if desired.

Tender Teriyaki Chicken

Get this tender, fall apart teriyaki chicken for your next stir fry craving! No take-out needed for this easy, flavorful dish!

Teriyaki Chicken 8 chicken breasts (frozen works great) 3/4 cup sugar 3/4 cup soy sauce 6 tablespoons cider vinegar 3/4 teaspoon ground ginger 4 cloves minced garlic 1/4 teaspoon pepper 2 teaspoons sesame oil 4 1/2 teaspoons cornstarch 4 1/2 teaspoons cold water Add everything in pot except cornstarch and water. Push poultry setting for 17 minutes, then QPR. Remove chicken and shred on a plate. In a small bowl, add the cornstarch and 1-2 teaspoons of water, just enough to dissolve the cornstarch without lumps. Stir in remaining water. Switch pot to saut? mode. Add cornstarch water to the sauce in the pot and stir/whisk until it boils and thickens. Add chicken back into pot. Turn off pot and serve with rice and veggies. ? #instantpot
