If you've been throwing away watermelon rinds all this time, then prepare to have your mind blown by easy, fast, and tasty watermelon rind pickles from The Huffington Post. Most of the ingredients are pantry staples -- sugar, salt, cider vinegar -- though if you're new to pickling, you may need a $3 container of pickling spice (you can also make your own with a simple recipe including bay leaves, cloves, mustard seeds, peppercorns, and other spices). Slice the rind, boil it, and let the pieces marinate in brine for as little as six hours; because they're ready so quickly, the pickles are a perfect last-minute addition to the appetizer spread at your next barbecue. They'll keep in the refrigerator for up to two weeks, too, although we wouldn't count on them lasting that long once your family gets a taste.
