Roasting marshmallows over a campfire is one of my favorite summer activities. Marshmallows are a food I only eat once a year, and for me it is an indulgence - even when it's made with healthy ingredients. I keep myself to eating them once a year because if I had them in the house I wouldn't be able to stop myself from eating them all the time. Despite the whole foods diet my family regularly eats, we still manage to incorporate better quality versions of treats into our diet.

For this once a year treat, I've started making homemade marshmallows. They are labor intensive and quite messy, but well worth the effort to make. The only thing that can make them better is to pair them with 85% dark chocolate and homemade grain-free graham crackers.

These graham crackers, which are dairy-free, grain-free and gluten-free, are really easy to make. I've even skipped the rolling out step, which follows the original recipe, which is for pie. This way you press the dough into a baking sheet until it is the desired thickness and cut it into squares once baked. Give them a try to make your summer festivities even more memorable. After all, who could resist a s'more made with a freshly baked graham cracker?

Grain-Free Graham Crackers


1/4 cup almond flour
1/2 cup plus 2 tablespoons coconut flour
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 teaspoon cinnamon
1/4 cup melted coconut oil
1/4 cup maple syrup
1 egg
1 teaspoon vanilla

1. Preheat oven to 350 degrees.
2. In a mixing bowl, incorporate the dry ingredients.
3. In a separate small bowl, whisk together the wet ingredients.
4. Combine the wet ingredients into the dry, and mix until a loose dough is formed.
5. Place the dough in between two pieces of parchment paper and roll to 1/4 inch thick. If you want to get fancy, cut the dough into 2 x 2 pieces and pierce with a fork to make it look like the classic graham cracker. I prefer to keep it simple and just bake them in large pieces.
6. Bake them on the bottom piece of parchment paper for about 9-15 minutes until golden brown.
