Try the Busby Family’s Delicious Sweet Potato Soufflé!

I want to share with you all my family's Sweet Potato Souffle recipe. I cook this nearly every New Year, Easter, Thanksgiving and Christmas. Everyone in the family loves it! We use it as a side with the meal, but everyone thinks it should be a dessert!

Sweet Potato Souffle

Souffle Ingredients:

3 cups mashed sweet potatoes

1 cup sugar

1/2 cup margarine

1 teaspoon vanilla

2 eggs

Topping Ingredients:

1 cup packed brown sugar

1/3 cup flour

1 cup chopped pecans

1/2 cup margarine

Baking Instructions:

Mix all the souffle ingredients thoroughly and pour into a greased casserole dish.

Mix topping ingredients thoroughly and sprinkle on top of the potatoes in the dish. Bake at 350 until it begins to bubble up. Enjoy!
