These Healthy Tacos Are the Perfect Weeknight Meal

It may be fall, but that doesn't mean taco cravings stop. Tacos are extremely easy and are often forgotten when thinking of healthy dinners to make. This is a very quick meal that you can make any night of the week. All you need is a base for the tacos and whatever toppings your heart desires! The base of these tacos is a black bean and quinoa mixture. It is super high in protein and won't leave you feeling weighed down! The possibilities for these are endless so get creative and enjoy!

You will need:

  • 1 cup quinoa
  • 8 oz. can black beans
  • Corn tortillas
  • Guacamole (I used pre-made guacamole)
  • 1-2 stalks of corn
  • Cilantro (as needed)
  • Lime (as needed)

Directions:

Cook 1 cup of quinoa in 2 cups of water or stock. Bring to a boil and simmer until liquid is absorbed and quinoa is fluffy. Add as much black beans to the quinoa as you desire. I used a little over half a can for the 1 cup of quinoa. Quickly heat up the corn tortillas in a pan to heat them through. Take 1-2 corn stalks and pan roast them in some olive oil. Once they start to char, take them off the heat and cut the corn off the cob. All that is left to do is assemble your tacos! Top them with corn, guacamole, cilantro, lime or whatever toppings you prefer! Enjoy your healthy tacos!
