Sophie and Katherine shared one of their absolute favorite healthy cupcake-alternative recipes.


Cranberry Orange Almond Muffins
Makes 12 muffins

Ingredients:
  • 2 cups whole wheat flour (or your flour of choice)
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons McCormick almond extract
  • 1 tablespoon freshly grated orange zest
  • 1 1/2 cups fresh or frozen cranberries
  • 1/2 cup sliced almonds

Directions:
  1. Preheat the oven to 350?F. Line a cupcake pan with twelve paper baking cups.

  2. Sift together the flour, baking powder, and salt in a bowl, and set aside.

  3. In the bowl of a stand mixer or in a bowl with a handheld electric mixer, cream together the butter and sugar on medium speed until light and fluffy, approximately 3 to 5 minutes.

  4. Add the eggs one at a time, mixing slowly after each addition.

  5. Combine the almond extract and milk in a large liquid measuring cup.

  6. Add one third of the flour mixture to the butter mixture, then gradually add one third of the milk mixture, beating slowly until well incorporated. Add another third of the flour mixture, followed by another third of the milk mixture. Stop to scrape down the bowl as needed. Add the remaining flour mixture, followed by the remaining milk mixture, and beat just until combined.

  7. Add the orange zest and mix until completely incorporated.

  8. Using a spatula, gently fold in cranberries.

  9. Using a standard-size ice cream scoop, fill each baking cup so that it is two-thirds full. Top each muffin with approximately 1 tablespoon of sliced almonds.

  10. Bake for 22 to 24 minutes (start checking at 20 minutes) or until a toothpick inserted into the center of a muffin comes out clean. Transfer the pans to a wire rack to cool completely. Serve and enjoy!

At-Home Baking Tips:
  • These are wonderful for a Fall or holiday breakfast!
  • If you are storing your muffins for later in the week, always freeze them. Never refrigerate them because that will dry them out. Freezing is the best way to store your muffins.
