Chocolate Chip Egg Nog Pancakes
Chocolate Chip Egg Nog Pancakes
Makes 6-8 pancakes

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/2 teaspoon McCormick nutmeg
  • 1/4 teaspoon McCormick cinnamon
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 2 cups egg nog
  • 1 teaspoon McCormick rum extract
  • 2 eggs
  • 1/2 cup chocolate chips
  • 2 tablespoons butter (to melt in pan)
  • 1/4 cup maple syrup (for serving)
  • 1/4 cup of confectioner's sugar (for garnish)
  1. Sift together all of the dry ingredients and set aside in a bowl.
  2. Beat the eggs until they are lightly beaten and add egg nog and rum extract.
  3. Combine the wet and dry ingredients and mix until well-combined. Using a spatula, gently fold in the chocolate chips.
  4. In a small frying pan, over medium heat, melt a small pat of butter to coat the pan.
  5. Pour 1/4 cup of batter into the pan and cook for 2-3 minutes until small bubbles form around the edges. Then, gently flip over the pancake and cook for another 2 minutes on the other side.
  6. Transfer pancake to a plate and repeat until all batter is used.
  7. Serve with maple syrup and a sifted dusting of confectioner's sugar, and enjoy!
    (Optional: Use a snowflake paper punch to create a stencil to use when dusting the confectioner's sugar to create sugar snowflakes on the pancakes.)
