Whether you’re looking for a healthy breakfast, refreshing snack, or alternative to an indulgent dessert, Sophie and Katherine’s baked parfait is perfect.

Sophie and Katherine's Baked Pear and Yogurt Parfaits
Makes 4 servings

  • 4 fresh pears, sliced
  • 4 teaspoons McCormick rum extract
  • 4 teaspoons McCormick ground cinnamon, plus an additional amount for garnish
  • 1/4 cup water
  • 2 cups vanilla yogurt (or Greek vanilla yogurt)

  1. Preheat the oven to 375?F.

  2. Place sliced pears into a small shallow baking dish.

  3. Add rum extract to water and pour over sliced pears.

  4. Sprinkle sliced pears with cinnamon so that they are evenly covered with cinnamon.

  5. Cover baking dish with a sheet of foil and bake for 25-30 minutes.

  6. Scoop a 1/4 cup of vanilla yogurt into 4 small glass serving dishes. Place a layer of baked sliced pears on top of the yogurt in each glass dish. Scoop another 1/4 cup of vanilla yogurt in each dish, and top with a second layer of baked sliced pears.

  7. Top each parfait with a dusting of cinnamon. Serve and enjoy!
