Simple Grilled Shrimp Skewers with Fruit Salsa

It's not everyday that you get a phone call from a 2-time gold medalist Olympian.

And even more rare is when he offers to bring a friend to my home and COOK for my family.

Yes, you read that correctly. In fact, I made sure to document the afternoon with video and photos, just for proof that it really did happen.

That right there, my friends, will only happen once in my life time.

Garrett's second passion after swimming is healthy cooking. His hobby came out of necessity, after being diagnosed with high blood pressure and not wanting to depend on meds to control it. You know that silly little thing called 'drug testing' that the Olympic committee makes the athletes go through? Well, Garrett didn't want to have to deal the fuss of medication, so he took healing in his own hands, with food.

His method for cooking is simple. Fresh ingredients, bold flavor and very little sodium or fat. He's even got a food blog, Athletic Foodie and has a regular cooking gig on local television and has a YouTube channel.

I'm sure we'll see more of Garrett in the kitchen, he's just such a natural on camera and already a role model for millions of kids. Maybe he's the American Jamie Oliver? My fingers are crossed.

To make the grilled shrimp skewers above, take 1 pound shelled shrimp and toss with 2 tablespoons of Garrett's Kickin' Spice Rub. Thread on skewers and grill 2-3 minutes each side. Serve with the Pineapple and Mango Salsa.

Garrett's Kickin' Spice Rub
Good taste and a little kick...just the way I like it. You can cut back on the red pepper flakes to make it a little milder.

2 1/2 tablespoons paprika
2 tablespoons garlic powder
1 1/2 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon black pepper
1 tablespoon onion powder
1/2 tablespoon cayenne pepper
1 teaspoon of low sodium sea salt
1/2 teaspoon crushed red pepper flake

Garrett's Pineapple and Mango Salsa
2 cups diced Mango
2 cups diced Pineapple
2 tablespoons chopped Mint
2 tablespoons chopped Cilantro
1 tablespoons Olive Oil

Mix all ingredients well and let sit for 10 minutes.
