Make This Gluten Free Blender Bread in Two Simple Steps

Whether you want to whip up a quick bread to go with your favorite soup at a gluten-free dinner party or need a healthier option for your morning avocado toast, it doesn't get easier than this blender bread from Danielle Walker's Against All Grain Celebrations: A Year of Gluten-Free, Dairy-Free, and Paleo Recipes for Every Occasion.

The ingredients are easy to source -- cashews, eggs, almond milk, apple cider vinegar, baking soda, salt, coconut flour -- and also somewhat flexible: you can change the type of nut that forms the base (to macadamia or almonds) or use dairy milk instead of almond. Blend the ingredients for less than two minutes and then bake for about an hour. Add your favorite nut butter or sandwich toppings for a healthy, grain-free meal.
