Roasted Maple Cinnamon Pumpkin Seeds


Ingredients

  • Seeds from 1 pumpkin, in shells
  • 1 tablespoon olive oil (per 1/4 cup of pumpkin seeds)
  • 1 teaspoon McCormick maple extract (per 1/4 cup of pumpkin seeds)
  • 1/2 teaspoon McCormick cinnamon (per 1/4 cup of pumpkin seeds)
  • 1/2 teaspoon salt, optional (per 1/4 cup of pumpkin seeds)


Directions

  1. Remove seeds from a pumpkin and rinse off thoroughly.
  2. Preheat the oven to 350 F. Grease a medium baking sheet with olive oil or nonstick cooking spray.
  3. Spread pumpkin seeds evenly on baking sheet and bake for 20 minutes.
  4. Whisk maple extract into olive oil.
  5. Remove pumpkin seeds from oven and toss seeds in olive oil and maple extract.
  6. Place pumpkin seeds back on baking sheet, and spread evenly. Season with cinnamon (and salt, if desired).
  7. Bake in oven for an additional 15-20 minutes or until the shells become golden brown.
  8. Serve as a delicious snack and enjoy!
