Pumpkin Phyllo Triangles

Makes approximately 40 small triangles

Ingredients

  • 10 sheets phyllo dough (plus extra, in case some rip)
  • 1 1/2 pounds baked and pureed pumpkin (or canned pumpkin)
  • 1/2 cup butter, melted
  • 1/2 cup of honey
  • 1/2 teaspoon McCormick maple extract
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoon ground McCormick cinnamon
  • 1/2 teaspoon ground McCormick nutmeg

Sophie and Katherine like to roast their own pumpkin, but you can also make this recipe with canned, pureed pumpkin.

Directions

  1. Preheat the oven to 350 F. Grease a medium baking sheet with butter.
  2. Mix pureed pumpkin, honey, maple extract, sugar, cinnamon, and nutmeg together in a medium bowl.
  3. Cut phyllo dough into vertical strips and cover pile of phyllo strips with a clean damp tea towel.
  4. Lie one phyllo strip flat on a workspace in front of you. Using a pastry brush, brush the surface of the phyllo dough with an even coat of butter. Place a tablespoon of pumpkin filling at the end of the phyllo strip. Fold phyllo dough over in a flag pattern until the phyllo is the shape of a triangle. Place on baking sheet.
  5. Repeat until all pumpkin filling is used up!
  6. Bake in oven at 350 F for 30 minutes or until tops of triangles are golden brown.
  7. Serve and enjoy!
