How to Make ‘DC Cupcakes’ Sophie and Katherine’s Easter Nest Cupcakes

Georgetown Cupcake's delicious twist on the popular caramel-filled chocolate Easter egg is sure to be a holiday hit!


Ingredients

  • 12 unfrosted chocolate cupcakes
  • vanilla buttercream frosting (or white chocolate buttercream frosting)
  • 1 apple corer
  • 1 cup of caramel
  • 1 cup of sweetened coconut flakes
  • 36 mini candy-coated pastel Easter eggs

 

Instructions:

  1. Bake chocolate cupcakes using Georgetown Cupcake's chocolate cupcake recipe, featured here, or Georgetown Cupcake's Chocolate cupcake mix!
  2. Prepare vanilla buttercream frosting using Georgetown Cupcakes recipe, featured here. To make white chocolate buttercream frosting, mix in 1/2 cup of melted (and cooled) white chocolate chips.
  3. Once baked cupcakes are cooled, using an apple corer, twist and remove the center of each cupcake.
  4. Transfer caramel sauce to a plastic freezer bag and snip the tip. Squeeze caramel into the hole in the center of each chocolate cupcake, filling each to top.
  5. Transfer vanilla buttercream frosting (or white chocolate buttercream frosting) to a large plastic freezer bag fitted and cut an opening approximately 1.5'' wide.
  6. Frost each cupcake with a "signature swirl" of frosting, starting in the center of the cupcake, going around in a circle with even pressure, and ending in the center with a burst of pressure.
  7. Spread coconut on a baking sheet and toast in oven at 325F for approximately 3-5 minutes or until it reaches a light caramel color. Let cool and reach room temperature.
  8. Top each cupcake with a tablespoon of toasted coconut, piling it into a nest shaped in the center of each cupcake.
  9. Place 3 mini candy-coated pastel Easter eggs on top of each nest on each cupcake.
