How to Cook Once and Eat Twice with Your Summer Veggies

With tons of fresh veggies around during the summer months, cooking dinner should be a breeze. But who wants to be stuck in the kitchen when the sun is shining and the weather is beautiful? Since you've got to eat and you want to take advantage of the fresh produce of the summer, why not change up your regular dinner menu and incorporate all of summer's finest vegetables into meals that can be turned into multiple dinners. Here are a few of our favorite cook once and eat twice meals where summer veggies are the star.

Grilled Vegetable Pasta

Grill your summer veggies like squash and asparagus and add half to this light and delicious summer veggie pasta for dinner tonight. Then tomorrow, add the rest of the grilled veggies to chicken or salmon for a lite summer dinner.

Summer Flatbread

Make a summer flatbread that is full of fresh, delicious, and colorful vegetables. This will make the perfect dinner or lunch for your family. Be sure to cut up extra veggies and keep them in your fridge so you can whip up cheese and veggie quesadillas for dinner tomorrow.

Corn on the Cob

Corn on the cob is a must have side during the summer. Double up on this parmesan and chive corn on the cob so you can eat some for dinner tonight, and use the leftover corn in a fresh summer salad for dinner or lunch the next day.

Foil Veggies

Make sides for the entire week all at once by creating foil packets. You can change the seasoning from simple salt and pepper to lemon butter and garlic to even a spicy red pepper. Put all the packets on the grill or in the oven and enjoy the freshly cooked veggies the entire week.
