Culinary talent runs in the Valastro family, and though Buddy is a master baker, he can still take lessons from his older -- and maybe wiser -- family members. In the video above, Buddy attempts to recreate his Aunt Nina's all-star cheesecake recipe. Made with just a handful of delicious Italian ingredients, it's melt-in-your-mouth good and sure to impress your family. Try this surprisingly simple take on a dessert classic.



4 eggs, separating the yolks and egg whites
3 pounds fresh ricotta
1 c. granulated sugar
1 tsp vanilla
Zest of one lemon
1 tbsp Strega herbal liqueur
Flour (enough to cover pan)


  1. Preheat the oven to 400 degrees.
  2. Separate the eggs from the egg whites, placing each in medium mixing bowls. Using a mixer, whip the egg whites until soft peaks form.
  3. Meanwhile, add 3 lbs fresh ricotta to the egg yolks and mix together.
  4. Add the sugar, vanilla, lemon zest and Strega to the ricotta mixture and stir until blended.
  5. Fold egg whites into the ricotta mixture (Buddy recommends adding them in three parts) until blended.
  6. Butter a 9-inch springform pan and add flour to coat the pan.
  7. Pour the ricotta mixture into the pan and spread it evenly throughout.
  8. Place the cheesecake in the oven; decrease the temperature to 350 degrees. Bake it for 45 minutes and let it cool completely before serving.
