A fast and easy meal.

I'm always on the hunt for simple and fast recipes to make weeknight dinners for my family. I couldn't find the exact recipe I was looking for tonight, so I improvised with the ingredients I had on hand.

We served this simple-but-delicious fish dish with a side of snap peas and a green salad.


4 (4 ounce) fillets tilapia or other white fish

2 tablespoons butter

1/3 cup white wine

4 garlic cloves, minced

1/4 cup fresh lemon juice (roughly the juice of two lemons)

Salt & pepper to taste

Other seasoning if desired, e.g. fresh or dried herbs, lemon pepper, or Mrs. Dash. I used Bragg Organic Sprinkle.


1. Melt the butter in the microwave. Mix together butter, wine, garlic, lemon juice and any desired seasonings. Use the mixture to marinate the fish in the refrigerator for one hour.

2. Preheat the oven to 350 degrees F. Pour a layer of marinade in the bottom of a baking dish to coat, then place the fish in the dish. Pour the rest of the marinade over the fish.

3. Bake for about 20 - 25 minutes in the preheated oven, until the fish flakes easily with a fork.
