Cooking With Wine for National Wine Day with Buddy Valastro

Did you know you can do something else with wine that isn't drinking? That's right, you can even cook with the nectar of the gods! Check out this Coq Au Vin recipe from Buddy Valastro and pair it with a Pinot Nior, because of course we're going to both eat and drink the wine!

  • Start with about 4 strips of bacon
    • Cut in chunks
    • Cook over heat until crispy
  • Cover pieces of chicken with flour
    • Go generous with the flour - will help the sauce thicken
  • Take bacon off heat
  • Brown chicken in bacon grease
    • 3-4 minutes each side
    • Remove from heat & lay on a sheet pan
  • Add 1 diced onion to the pan with chicken & bacon grease
  • Add 2 stalks of celery - diced
  • Add 2 diced carrots
  • Add any full-bodied red wine
  • Add about 4 cloves of garlic
  • Add 1 teaspoon of chopped fresh thyme
  • Add 1 bay leaf
  • Add salt
  • Add black pepper
  • Pour 2 cups low sodium chicken stock
  • Add the rest of the bottle of wine
    • Wine will reduce
  • Add the chicken back in and braise all together
    • Infuse chicken with wine
  • Cook for 10 minutes until boiling then simmer for 20 minutes
  • While the chicken & sauce is cooking, saut? mushrooms and pearl onions
  • Add the onions/mushrooms to the sauce & heat up
  • Top with bacon & fresh parsley
  • Pair with red wine (Pinot Noir)
