Celebrate Cinco de Mayo Cake Boss Style With Buddy’s Sweet Churros and Savory Quesadilla

Churros & Cinnamon Chocolate Sauce Recipe

  • Start with one cup of water added to a pot over heat
  • Add 1/3 cup of butter to the pot
  • Add 2 tablespoons of brown sugar
  • Add salt & bring to a boil
  • Add 1 cup of flour - want the flour to come into a ball
    • Mix up & let thicken
  • Add 3 eggs & crack one at a time so the mixture doesn't become lumpy
  • Add 1/2 teaspoon of vanilla
  • Use a pastry bag & put the mixture into the bag
  • Heat vegetable oil to 375 degrees
  • Squeeze & cut out of the bag
  • Fry the churro dough
  • Top with a little cinnamon sugar & a pinch of cayenne after the dough is fried

Chocolate Sauce

  • Start 1/2 cup of cream
  • Add 1 tablespoon of sugar
  • Stir until the sugar dissolves
  • Throw a pinch of salt in
  • Add semi-sweet chocolate chips
  • Add 4 tablespoons of butter
  • Add 1/2 teaspoon of vanilla
  • Add 1/4 teaspoon of cinnamon

Chorizo & Onion Quesadillas

  • Start with uncased chorizo & unwrap
  • Add oil to a heated pan
  • Add sliced onions to the pan
    • Takes about 2 - 3 min to saut?
  • Add the chorizo to the pan & break up the meat
  • Cook for 6 - 7 minutes until browned
  • Take oil & brush it on a tinfoil-lined pan
  • Take two tortillas & lay flat on the tinfoil side by side
  • Add chorizo & onion mixture to the tortillas
  • Spread the mixture around
  • Add sharp cheddar cheese to each tortilla
  • Add a tortilla to each & brush with oil
  • Cook for 10 min at 400 degrees
  • After 10 minutes, go to 450 for 5 minutes
  • Cut in slices
  • Add sour cream & cilantro
