This recipe using BUSH'S® Barbecue Baked Beans is the perfect side for any summer barbecue!

Bacon Mania Baked Beans
Serves 6

Bean Sauce
1 lb smoked bacon
6 oz. slab bacon, diced (1/4")
1 sm. yellow onion, thinly sliced

3 cloves garlic, peeled and thinly sliced
2 star anise
2 bay leaves
3 T. dijon mustard
2 t. malt vinegar
2 t. coarsely ground black pepper
1 28-oz. can BUSH'S® Barbecue Baked Beans

Preheat oven to 350 degrees.

Arrange sliced bacon on a half sheet tray and bake until fat has rendered and bacon is crispy, about 25 minutes. Reserve bacon drippings and set cooked bacon aside. When bacon is cool enough to handle, coarsely chop and set aside.

Meanwhile, transfer 2 T. bacon drippings to a large skillet set over medium heat. Add diced slab bacon to pan and fry lardons until well browned and crispy, about 10 minutes. Remove lardons from the skillet with a slotted spoon and transfer to a paper towel-lined plate to drain.

Reduce heat to low and add onion to pan. Cook, stirring occasionally, until well browned, 20-25 minutes. Remove onions from pan with a slotted spoon and transfer to a large bowl and set aside.

If necessary, remove all but 2 T. bacon drippings from pan. Return heat to medium and add garlic, star anise, and bay leaves to pan. Saute until fragrant, about 1 minute. Add dijon mustard, malt vinegar, and black pepper to pan and cook, stirring constantly, about 30 seconds longer. Remove from heat and transfer to large bowl with cooked onions. Add lardons and Bush's Barbecue Baked Beans to bowl and stir to thoroughly combine.

Transfer bean mixture to a 8x8" casserole dish and bake until hot and bubbly, about 20 minutes. Top with chopped bacon and serve.
