Attention, Busy Moms! Here’s a Delicious Last-Minute Potluck Meal

While the east coast and most of the country are getting slammed with snowstorms, Los Angeles has been seeing nothing but sun and record-breaking temps of 85 and above. So, when we were invited to our first potluck baby barbecue, I got out the swim trunks and started planning my snack contribution. The thing about being a new mom, though, is that the best-laid plans rarely actually work.

Fast-forward to Saturday morning, I got the baby ready and was all set to run to the store to pick up supplies for the perfect potluck meal when he... fell asleep, needed a bottle, needed water, needed his solids, needed a walk, and I needed a shower. Two hours post-party start time, and we were still at home, in pajamas, out of luck, and with no dish.

Being the quick-thinking gal I am, we threw on our bathing suits and packed up the car. On the way to the party, we stopped at the grocery where we picked up:

  • Pre-cooked lentils and mirepoix (a mix of celeries, carrots, and onions)
  • A jar of peaches
  • Raspberries
  • Blackberries
  • Honey
  • Fresh mint
  • Fresh basil
  • A box of Ziploc bags

I dumped the lentils and mirepoix into a Ziploc and shook it up. Voila! Meal #1. I then put the peaches with juice, raspberries, blackberries and fresh mint with a squeeze of honey into another Ziploc. Hey look - dessert! The fresh basil plant was a hostess gift in lieu of flowers and went nicely as garnish on the lentil dish.

Our healthy, no-fuss potluck contribution was a total hit, and it was prepared in the car in less then two minutes. SCORE!
