7 Veggies You Can Turn into Noodles (and Delicious Recipes for Them)

I love pasta as much as the next lady, but in the interest of my health (processed carbohydrates don't have the greatest track record) and my waistline, I'm always looking for ways to add fruits, veggies, and other natural foods to my diet. But there's only so much salad a person can eat, which is why I've been experimenting with ways to make my favorite foods more nutritious meals. To kick that off, I've been making cauliflower pizza crust and am on a quest to find the perfect veggie pasta. Yep, that's right, veggie pasta. And not the kind that is just regular pasta in vegetable colors -- I'm talking about turning your favorite vegetables into pasta.

There are no shortage of vegetables whose flavor and texture make delicious noodles. Check out my favorite ones (with recipes, of course) and share your own! One caveat: You'll probably need a food processor or spiralizer to get the perfect shredded veggies.

Zucchini

This one is pretty obvious (we've even covered it before), but that doesn't make it any less delicious. Because summer squash is coming into season, this is a great way to test the vegetable noodle waters. If you like Asian-inspired flavors, try this zucchini pad thai from White on Rice Couple -- it's delicious!

Parsnips

These root vegetables make a surprisingly hardy noodle that can stand up to heavier sauces. These parsnip noodles with bolognese sauce, from Plated with Style, will surprise you with how much it tastes like the Italian classic.

Carrots

Packed with vitamin A, carrots should be a party of your regular diet. But if you're sick of carrot sticks and hummus, try carrot noodles. They are great substitutes in stir-fries and really add an earthy flavor. Test out Thank Your Body's carrot noodles with peanut sauce -- so much better (and healthier) than takeout.

Spaghetti Squash

Though spaghetti squash is softer in texture than some of the other veggies we've covered, it's no less delicious. Just roast the squash, then use a fork to scrape out the inside into spaghetti-like strands. Broccoli

Broccoli isn't a vegetable that you'd think would work well as noodles, but when you consider how many broccoli stalks you waste, it actually makes perfect sense. In Inspiralized's recipes for garlic broccoli noodles with toasted pine nuts, you see how you can use the stalk for noodles and still include the florets in your final dish!

Sweet Potatoes

Your favorite fall vegetable is about to get better. Full of fiber, sweet potatoes make the perfect noodle. And, in this tasty recipe from Pinch of Yum, add in a creamy cashew sauce to make a seemingly decadent dinner.

Turnips

Turnips, like parsnips, have a tougher texture, which works well in this pesto, pea, and asparagus pasta salad from Food, Faith, and Fitness. It's the perfect healthy side dish for any picnic you're attending this summer.
