Try these easy vegetarian meals -- all of which you can make with almost no effort in the slow cooker -- to give your meatless menu a makeover.

    Extra vegetables make this pot pie recipe from Cooking Light as hearty and filling as your favorite chicken version: Replace the meet with parsnips and mushrooms while keeping the traditional potatoes, peas, carrots, and onions, for a meatless Monday meal.
