There's only so many times you can serve black bean enchiladas, pasta primavera, and homemade pizza before they start getting restless for something new. Try these easy vegetarian meals -- all of which you can make with almost no effort in the slow cooker -- to give your meatless menu a makeover.

    Vegetable Pot Pie with Parmesan-Black Pepper Biscuits

    Extra vegetables make this pot pie recipe from Cooking Light as hearty and filling as your favorite chicken version: Replace the meet with parsnips and mushrooms while keeping the traditional potatoes, peas, carrots, and onions, for a meatless Monday meal. The biscuit topping, which includes buttermilk, Parmesan, and freshly ground pepper, adds a rich finish.

    Slow Cooker Greek Stuffed Peppers

    Mediterranean flavors -- include cannellini beans, feta, couscous, oregano, and lemon -- create a delicious filling for slow cooked stuffed peppers from Martha Stewart. Slicing a thin piece off the bottom of each pepper helps it stand in the slow cooker; then just mix the remaining ingredients, cut the tops off of the peppers and fill them with the couscous mixture.
