5 Quick and Easy Foil Packet Dinners for Busy Weeknights

Summer evenings are meant for spontaneous trips to the ice cream shop, catching fireflies at dusk, and last-minute games of tag with the neighborhood kids -- not for staying inside to clean the kitchen. Turn to these foil packet dinners for easy meals with minimal cleanup, whether you use the grill or the oven.

1. Sausage, Potato, and Green Bean

Hearty sausage, potato, and green bean foil packets from Damn Delicious -- ready in about 15 minutes -- are made with smoked andouille sausage, red potatoes, green beans, cremini mushrooms, and onion, and flavored with butter, parsley, and cajun seasoning. Serve alongside salad, corn on the cob, or fresh rolls.

2. Grilled Ceasar Salmon

If it's too hot to eat a heavy meal, choose light, tender, grilled Ceasar salmon foil packets from The Cookie Rookie. The packets are layered with fish, tomatoes, sweet peppers, jarred artichoke hearts, and sliced lemons, and then flavored with creamy Caesar dressing. The finished product could be a meal on its own, a tasty main course when served over rice, or a healthy way to add protein and turn a plain salad into a dinner-worthy dish.

3. Low Country Boil

Even if you can't get to the Southern coast, you can (almost) feel like you're there with a low country boil packet from Nutmeg Nanny. The traditional combination of corn on the cob, shrimp, andouille sausage, and tomatoes is tossed with Old Bay seasoning, olive oil, and butter for a go-anywhere take on the classic.

4. Philly Cheesesteak

Though a Philly cheesesteak foil meal might have Philadelphia locals rolling their eyes, the recipe from Delish.com combines all the essential flavors in one easy packet. Flank steak, bell peppers, and onions tossed with olive oil and Italian seasoning grill in about 10 minutes; diners who prefer their cheesesteaks "wit" can open the packet and add a slice of provolone to melt toward the end of the cooking time. Pair with homemade fries, or serve in hoagie rolls for a slightly more authentic experience.

5. Salsa Verde Chicken, Rice, and Veggies

This Mexican-inspired take on foil packet dinners from Chelsea's Messy Apron is a recipe for creamy salsa verde chicken, rice, and veggies -- but since the rice cooks in the foil packet, the ingredients call for more precision than most oven-baked meals. She recommends using pieces of chicken that weigh 7 ounces and are 1/2 inch thick so that the chicken is perfectly cooked when the rice is finished. Season the chicken with cumin, garlic powder, salt, pepper, chili powder, and paprika and put the chicken on top of the uncooked rice (mixed with water) in each packet; then add black beans and top with cream cheese and salsa verde to create a warm, creamy topping after baking.
