12 Recipes for Leftover Easter Eggs

It's not unusual to have a pile of brightly colored hard-boiled eggs left over after Easter. Instead of tossing them in the compost, peel away the shells and put them to use in some of these recipes. From traditional salads to surprising sugar cookies, there's something here for everyone.

1. Curried Eggs in Mini Pita

To make curried eggs in mini pita, start with a basic egg salad using 4 chopped hardboiled eggs, 1/4 cup mayonnaise, 2 tbsp chopped scallion, 1 tsp Dijon, 1 tsp cider vinegar. Add 1/2 -1 tsp curry powder (depends how spicy you want it), 1/4 tsp ground cumin, 1 medium Granny Smith apple, peeled and chopped finely. Season with salt and pepper. Divide egg salad into 8 mini pita pocket halves and serve for lunch.

2. Salade Nicoise

Boil 4 potatoes, then peel and dice. Cook 1/2 lb green beans until tender-crisp. Combine potatoes, beans, 1 pint halved cherry tomatoes, 1/2 sliced red onion, 4 hardboiled eggs, cut in quarters, 1/2 cup Ni?oise or Kalamata olives, and a handful of torn lettuce (optional). Top with 2 tins tuna, broken up and sprinkled over. Drizzle with basic vinaigrette and serve.

3. Smoked Salmon with Egg Salad and Green Beans

This is a good portable lunch recipe and deluxe version of egg salad. Cook 1/2 lb green beans until tender-crisp and cut into 1-inch pieces. Make basic egg salad recipe with leftover hardboiled eggs. In a medium-sized glass Mason jar, place layers of smoked salmon, beans, and egg salad.

4. Scotch Eggs

Scotch Eggs are a traditional pub favorite that are delicious for a hearty breakfast. Divide 1 lb sausage meat (no casings) into 4 piles. Spread each pile into a thin round and encase 1 peeled hardboiled egg in meat. As if making schnitzel, roll in a thin layer of flour, then beaten egg, then fresh bread crumbs (or crushed corn flakes). Using a deep fryer or heavy pot, heat 2 inches of cooking oil to 350F. Fry eggs until done, about 10 minutes, and serve warm with mustard.

5. Asparagus with Tarragon Vinaigrette and Eggs

Asparagus with Tarragon Vinaigrette and Eggs make a delicious springtime side dish: Wash and trim 1 lb asparagus, and steam until just tender. Make a basic vinaigrette with olive oil, vinegar, Dijon, salt and pepper. Whisk in 1 tbsp finely chopped fresh tarragon. Halve 1 hardboiled egg and push both halves through a coarse-mesh sieve into a bowl. Toss asparagus with some vinaigrette, divide among 4 plates, top with egg, and drizzle more vinaigrette.

6. Curried Deviled Eggs

Give these deviled eggs authentic South Asian flavour with garam masala, a traditional aromatic spice. Using 6 hardboiled eggs, transfer yolks to a bowl and mash with a fork. Add 3-1/2 tbsp mayonnaise, 3 tbsp minced green onion, 1 tbsp minced seeded jalapeno, 1-1/2 tsp mango chutney (minced if needed), and 1/2 tsp garam masala. Season with salt and pepper and spoon mixture back into whites.

7. Eggs in Purgatory

Reminiscent of huevos rancheros, Eggs in Purgatory makes for hearty breakfast fare. Make a spicy tomato sauce with onions, garlic, cayenne, bacon (optional), and a can of tomatoes. Slice hardboiled eggs about 1/2 -inch thick and place in dish, pouring sauce over. Serve with toast or bread.

8. Creamy Salad Dressing

Homemade salad dressing is easy, delicious, and much healthier than storebought versions. Halve hardboiled eggs and separate yolks and whites. Push yolks through a fine-meshed strainer. Whisk in olive oil, mustard, a touch of lemon juice, salt, and pepper. Toss with lettuce, such as romaine, and garnish with chopped egg whites.

9. Meatloaf with Eggs

Make your favorite meatloaf recipe. Pat half of it into the pan and make a trench lengthwise down the center, placing a row of hardboiled eggs in the trench. Cover with rest of meatloaf mixture and pat it down to enclose eggs and bake. Eggs will show up beautifully in the middle when you slice the meatloaf to serve.

10. Warm Spinach, Bacon, and Egg Salad

Use fresh baby spinach, saut?ed Portobello mushroom slices, sliced hardboiled eggs, crispy bacon, and croutons, if desired. Make a dressing from the leftover bacon fat, red wine vinegar, and a bit of brown sugar or red currant jelly, and drizzle over top.

11. Curry Eggs over Rice

Curry Eggs over Rice is an excellent vegetarian main course. Make a basic tomato curry sauce: Saut? 2 chopped onions, 3 cloves chopped garlic, and 2 tbsp minced fresh ginger in a generous amount of oil until golden. Add 1-2 tbsp curry paste and cook for 1 minute. Add 1 28-oz can diced tomatoes and 1 cup water and simmer. When consistency is thick and saucy, add 6 hardboiled eggs, peeled and sliced in half lengthwise. Nestle into sauce and let heat. Serve over hot rice.

12. Sugar Cookies with Egg Yolks

Sugar cookies are a very unusual way to use leftover hardboiled eggs! Make a basic sugar cookie dough: Cream together 1 cup butter, 10 tbsp sugar, pinch salt, and zest from 1 lemon in a food processor. Add 4 hard-boiled eggs, peeled, and process until fully incorporated. Mix in 1 raw egg. Add 3 cups all-purpose flour. Chill dough if needed, then roll out to 1/4 -inch and cut into rounds. Dip in raw egg white, dredge in white sugar, and bake at 350F for 12 minutes. Remove to rack to cool.
